Slow-braised beef in a rich chili consommé, folded into crisp cheese-lined tortillas for dipping.

Ingredients

  • 2 kg beef chuck and short rib
  • 5 guajillo chiles, 3 ancho chiles
  • 2 chiles de árbol for heat
  • 1 onion, 5 garlic cloves
  • 2 tomatoes, roasted
  • 1 tbsp cumin, 2 bay leaves, cloves and cinnamon
  • 2 tbsp apple cider vinegar
  • Corn tortillas and Oaxaca cheese
  • Onion, cilantro and lime to serve

Instructions

  1. Toast and soak the chiles, then blend with roasted tomato, onion, garlic and spices.
  2. Sear the beef, then simmer in the chili sauce with water for 3 hours until fork-tender.
  3. Shred the meat and reserve the consommé.
  4. Dip tortillas in the fatty broth, griddle with cheese and beef until crisp.
  5. Fold, garnish with onion and cilantro, and serve with a bowl of consommé for dipping.
