Ingredients
- 2 kg beef chuck and short rib
- 5 guajillo chiles, 3 ancho chiles
- 2 chiles de árbol for heat
- 1 onion, 5 garlic cloves
- 2 tomatoes, roasted
- 1 tbsp cumin, 2 bay leaves, cloves and cinnamon
- 2 tbsp apple cider vinegar
- Corn tortillas and Oaxaca cheese
- Onion, cilantro and lime to serve
Instructions
- Toast and soak the chiles, then blend with roasted tomato, onion, garlic and spices.
- Sear the beef, then simmer in the chili sauce with water for 3 hours until fork-tender.
- Shred the meat and reserve the consommé.
- Dip tortillas in the fatty broth, griddle with cheese and beef until crisp.
- Fold, garnish with onion and cilantro, and serve with a bowl of consommé for dipping.
