Ingredients

  • 8 tomatillos, husked
  • 2 serrano peppers
  • 1/4 cup cilantro
  • 2 garlic cloves
  • 1/4 white onion
  • Juice of 1 lime, salt

Instructions

  1. Roast the tomatillos and serranos until softened and lightly charred.
  2. Blend with cilantro, garlic, onion and lime.
  3. Season with salt and thin with a little water if needed.
  4. Serve fresh — it is brightest the day it is made.
