Ingredients

  • 6 roma tomatoes
  • 3 chiles de árbol
  • 2 guajillo chiles
  • 3 garlic cloves, unpeeled
  • 1/4 white onion
  • Salt to taste

Instructions

  1. Char the tomatoes, chiles, garlic and onion on a dry comal until blistered.
  2. Peel the garlic once cool.
  3. Grind everything in a molcajete or pulse in a blender, keeping it rustic.
  4. Season with salt and a splash of water to loosen.
