Baja Fish Tacos

Crispy beer-battered fish, crunchy cabbage slaw and chipotle crema — a taste of the Ensenada coast.

Ingredients

  • 600 g white fish fillets, cut into strips
  • 1 cup flour, 1 cup cold beer
  • 1 tsp baking powder, paprika, salt
  • 2 cups shredded cabbage
  • 1/2 cup crema mixed with chipotle
  • Flour tortillas and lime wedges
  • Oil for frying

Instructions

  1. Whisk flour, baking powder, spices and beer into a smooth batter.
  2. Heat oil to 180°C.
  3. Dip the fish strips and fry until golden and crisp, about 3 to 4 minutes.
  4. Toss cabbage with a little lime and salt.
  5. Fill warm tortillas with fish, slaw and a drizzle of chipotle crema.
